Veggie burger!


Let me start by saying that I am by no means a vegetarian. I love me some meat! I especially love burgers--mouth-watering tender, juicy beef burgers. But being that I'm trying to eat healthier and I happened to have some leftover hummus, I decided to make my very first veggie burger. And guess what, it was actually pretty good!

Okay, so to make the veggie burger I had to turn my two tablespoons left of week-old hummus into a veggie patty. To do that I simply added some breadcrumbs to the hummus, mixed in some all purpose flour, greased a pan and stuck that sucker in the oven for about 10-15 minutes..

After the patty was ready I just spread the usual burger condiments onto 2 slices of whole wheat bread, added some arugula and tomato and that was that! 

Of course one can't really expect a veggie burger to taste like a beef burger but it was a very satisfying burger nonetheless.

Arugula, carrot, and tomato salad with candied walnuts, goat cheese, and anchovies in a lemon-dijon balsamic vinaigrette


Okay, modesty aside, I make really good salads. Honest. For dinner tonight I made this Arugula, carrot, and tomato salad with candied walnuts, goat cheese, and anchovies in a lemon-dijon balsamic vinaigrette (I really have to work on that title). It's bursting with fun, fresh flavors--a perfect end to a wonderful lazy Saturday.

To make the dressing: mix lemon juice, olive oil, balsamic vinegar, garlic powder, dijon mustard, and mayonnaise.

mix arugula, carrot strips, tomatoes, goat's cheese, candied walnuts, and anchovies in a bowl. Add the dressing and enjoy your fun, fresh bowl of vegetable-y goodness!

Healthy Fish and Chips with a cilantro-garlic "tartar" sauce


I call it "healthy" fish and chips for three reasons--the first being it's cooked in olive oil, secondly the chips are baked not fried, and lastly the tartar sauce isn't actually tartar sauce, it's made up of sour cream, plain yoghurt, cilantro, lemon juice, and garlic.


Mmmm..just looking at the picture makes me hungry. Okay! So to make the batter I just mixed 1 egg, all-purpose flour, salt, pepper, garlic powder, and lemon juice. Just dip the fish in that and fry!


To make the "tartar" sauce--mix cilantro, garlic, lemon juice, plain yoghurt, sour cream, salt, pepper, and olive oil in a food processor until thick.


To make the chips--put the sliced potatoes (with skin) in a pan, season with salt and pepper..if you have barbecue powder, add it.. drizzle with olive oil, coat in all purpose flour and put in a hot oven for about 20 minutes.

Breakfast of champions: oatmeal with mixed berries and a banana-kiwi fruit salad

I love fruits--especially berries, kiwis and bananas. I can live on bananas and kiwis. I know it might seem a bit weird to mix bananas with kiwis, but take my word for it--they are GOOOD. 

I miss my tropical fruits thought. One of the downsides to living in a cold country--no tropical fruits. I want me some mangoes! The mangoes never really taste the same here. 

Anyway, I'm now moving on to eating pears. the brown, soft ones are really really good. One good breakfast suggestion--poached pears with orange juice.

Simply cook the pears in some orange juice, add some cinnamon and have a fantastic breakfast!

Baked lemon-y broccoli and mushrooms with mozarella



Finally had the time to post what I've been up to food-wise in the past week. In keeping with my New Year's resolution to eat healthier, I made this simple yet extremely flavorful broccoli and mushrooms dish for lunch. Just put the broccoli florettes and mushrooms in a pan, sprinkle with salt, pepper, lemon juice, and olive oil and put in the oven for about 10-15 mins, and voila! 

A happily healthy lunch! Paired it with some freshly squeezed lemon juice and I was a happy camper for the rest of the day.

tea time


Ending a very busy day with a very large cup of tea. Excited about the weekend--will finally be able to have some downtime.
