Arugula, carrot, and tomato salad with candied walnuts, goat cheese, and anchovies in a lemon-dijon balsamic vinaigrette


Okay, modesty aside, I make really good salads. Honest. For dinner tonight I made this Arugula, carrot, and tomato salad with candied walnuts, goat cheese, and anchovies in a lemon-dijon balsamic vinaigrette (I really have to work on that title). It's bursting with fun, fresh flavors--a perfect end to a wonderful lazy Saturday.

To make the dressing: mix lemon juice, olive oil, balsamic vinegar, garlic powder, dijon mustard, and mayonnaise. 


then..

mix arugula, carrot strips, tomatoes, goat's cheese, candied walnuts, and anchovies in a bowl. Add the dressing and enjoy your fun, fresh bowl of vegetable-y goodness!
