Baked lemon-y broccoli and mushrooms with mozarella



Finally had the time to post what I've been up to food-wise in the past week. In keeping with my New Year's resolution to eat healthier, I made this simple yet extremely flavorful broccoli and mushrooms dish for lunch. Just put the broccoli florettes and mushrooms in a pan, sprinkle with salt, pepper, lemon juice, and olive oil and put in the oven for about 10-15 mins, and voila! 

A happily healthy lunch! Paired it with some freshly squeezed lemon juice and I was a happy camper for the rest of the day.
